So good to see a few Tony Hawk posts! I checked out this thread just to mention how bad ass the first two games where. I remember being able to put the PSOne game disc in a CD player and listen to the soundtrack 😎

World of Warcraft's music was pretty majestic. Does it count as soundtrack?

Elder Scrolls IV: Oblivion soundtrack crushes everything else ever made.
THPS through THUG2 all had really good licensed soundtracks though if we’re counting those though

Older RPG soundtracks I listen to alot, like Xenogears, and alot of the Final Fantasy soundtracks are great.

Video game music is severely underrated. I have a few favourites...
Final Fantasy 7 & 8. Nobuo Uematsu is bae. The Ni No Kuni soundtrack, by Joe Hisaishi. He's a long time collaborator with Hayao Miyazaki and Takeshi Kitano. Skyrim. It's so evocative and one of the big things that makes me feel nostalgic about the game. Journey, Ico, Shadow of the Colossus, Metal Gear Solid 1 & 2. Others have said THPS and I agree with that. It got me listening to alternative music. GTA: Vice City also made me feel like I lived through the 80s.
I would add Silent Hill to this list too. It's so haunting. However I went to see a live performance of some of the music and it was total cringe. I was expecting some dark/ambient experience with the composer, Akira Yamaoka, but he'd enlisted a backing band with a female singer to do cheesy metal versions of all the songs. I'm still trying to separate the original music from that night in my mind.

Chrono Cross. So much epicness and diversity in all the character themes.
